Arf, I really tried to be a bit ahead of the game for Mother's Day this year but I had so much to tell you this week that I'm still behind… Well actually I'm mostly in the meringue, since this year I opted for a strawberry lime pavlova.
There are several stories about pavlova but they all agree that this dessert was created in honor of Russian prima ballerina Anna Pavlova.
It is made up of a crispy meringue topped with whipped cream sprinkled with fruit. If like me you're a bit behind for Mother's Day, it's a fairly simple dessert that requires few ingredients. You need to prepare it a bit in advance (because the meringue must cool before you can add the cream) but it's fairly quick to make. I added a little lime to give a kick to the strawberries and the whole thing was really delicious!
A little tip for the meringue, add a few drops of lemon and a teaspoon of cornstarch. It's not essential but it helps a bit. The lemon will help your meringue rise and the cornstarch will make it softer on the inside. On the other hand, don't try (like I did) to reduce the sugar in your meringue, it won't work. You always count double the sugar in relation to the weight of the egg whites (which you weigh of course!). And a little tip to beat your whites well: separate them 1 day before and keep them at room temperature.
For the whipped cream, I explained it to you in my no-bake after-eight cake recipe, you whip your cream well chilled so it whips properly. I personally added a little Galvani tiramisu preparation that I had left over, but normally it's classic mascarpone that we use to hold the cream.
I want to draw your attention to the fact that the quantities for this strawberry pavlova are for 2 people, don't forget to multiply according to the number of dessert lovers around the table!
