Almond, walnut and chocolate spread

Well, it really had been super long since I participated in the Foodista Challenge! Since my strawberry mousse it seems... I like challenges because they allow me to push myself on an imposed theme while with the blog usually I follow my feeling and my desires. It pushes me to exceed myself, something I don't necessarily do without constraint. The problem is that the date is imposed and it always shakes up my schedule a bit. Before I rarely had time to have a recipe ready on time but now that I'm giving more time to the blog, I think I'll participate more and more often. And for this month's recipe I propose to you an almond, walnut and chocolate spread!

After all I took the theme seriously because I made a spread but also the bread to go underneath! Indeed since this summer I started making sourdough bread and after a few failures and disappointments, I think I'm starting to get the hang of it. I'm happy that this challenge allowed me to share a bread recipe because it's not really in the editorial charter of this blog in theory.

On the other hand, I don't feel comfortable enough yet to talk to you about sourdough so I'm going to give you the recipe that is achievable with yeast. I had brought flour from Normandy to make Nordic bread and it was really, really delicious! The bread has a little hazelnut flavor and crunches when tasted. It has character and you can feel the difference with bread from the baker. Well, let's not fool ourselves, it also has this little taste of pride and bad faith of "it's much better because I made it MYSELF". But tasted with Mom's strawberry jam it was just a KILLER.

It also goes very well with the spread I'm proposing to you. I had brought walnuts from the garden and I thought it would be a good idea to mix them with chocolate. Finally when tasted the bitterness of the walnuts was a bit too strong so I added a bit of almond butter to rebalance and it was perfect! It's also much healthier than spreads full of palm oil that you can find in stores. I really need to get into the habit of making it more often because it's really super simple!

Instructions

    In the robot bowl (or in a salad bowl if you knead by hand), pour the flour and make a well in the middle. Fill with water and dilute the yeast in it. Give a few turns of the robot (or fold with a spatula) and add the salt.

    Knead for 10 minutes. The dough should come away from the robot bowl and make splosh-splosh sounds.

    Turn the dough out onto a floured work surface and knead a few seconds by hand. Then fold the dough to build strength: take one side of the dough and fold it under the opposite side. You can follow this video: https://www.youtube.com/watch?v=knrfKLsZRco

    Let rise in the fridge for 1 hour. Then shape the bread according to the shape you want to give it (here a family loaf but you can easily make baguettes for example).

    Let rise for 2 hours at room temperature (the bread should double in volume) and bake for 40 minutes in a preheated oven at 240°. You can put a jam jar filled with water in the oven to get a nice crispy crust.

    The bread is done when the bottom sounds hollow when tapped. If not, you can turn the bread over and bake it upside down for another 10 minutes.

    Brown in a pan over low heat the almonds, walnuts and powdered sugar.

    The sugar should coat the walnuts and almonds well and caramelize. Once well roasted, place them on a silicone mat to cool.

    Using a blender, reduce the almonds and walnuts to powder then to paste. Add the tablespoon of oil to help the process. It takes a little time but the oil from the walnuts will eventually come out and the preparation will become almost liquid. Don't hesitate to turn off the robot to prevent the motor from getting too hot!

    Melt the chocolate in the microwave or in a water bath. Add it to the mixture and blend finely.

    Spread gently on the freshly baked bread and enjoy
