Little mummy shortbread cookies, scary but adorable to celebrate Halloween!
Hey, I don't know if you're planning to celebrate Halloween this year, but I am. It's a celebration that I love and I regret that it has lost its appeal over the years. In any case, I decided to resist and give you a few recipes by October 31st, maybe that will give you the desire to get into it too! And to start, I propose these adorable Halloween mummy shortbread cookies.
It's not very complicated and you can even make them with your children during the holidays. Plus, it will make you pull out the Christmas cookie cutters early. A nice transition to the end-of-year festivities then.
I used my nutella shortbread recipe which I revised a bit for the occasion. Indeed, since the filling is composed of a lot of sugar, I lightened the proportions in the shortbread and added a little lemon. Well, I confess that under the layer of sugar you don't feel it much but I dare to believe that the acidity of the lemon counterbalances (a bit) the taste of the sugar.
To make the little shortbread cookies, it's super simple! Mix the dry ingredients, add the softened butter, an egg and boom... in the fridge for 20 minutes. Then you take out the dough and let it come back to room temperature (about 10 minutes), spread it to 2 mm thick and cut out shapes with the cookie cutter. Then bake for 20 minutes at 180°C.
For the icing, I tried royal icing but I wasn't really satisfied with the result. It was a bit thick and I couldn't manage to give a bandage effect (well I'm a complete flop at royal icing, so not really a reference). So I tried fondant and it was perfect. It takes some practice but once you get the hang of it, it rolls right along.
For optimal results, I recommend making your bandages with very hot fondant (so very liquid). To do this, I recommend leaving your double boiler on the stove and putting the pot back on for a few seconds between each cookie. To coat, just take a small spoon and make fairly quick back-and-forth motions to deposit the fondant. The faster you go, the thinner the bandages will be. That's how I prefer them but after all, it's up to you to find your preferred technique ^^. For the eyes, I made them with royal icing but if you find candy in stores, it will be much simpler.
Once your bandages are drawn, let the cakes cool for 15-20 minutes for the fondant to set properly and your mummy shortbread cookies are ready! Then you can use them to decorate a table or throw yourself greedily at them. After all, it's Halloween, no mercy for the enemy!
